How to Make Matcha Protein Bites

Below is an overview of the instructions for these shamrock-inspired matcha protein bites. Please be sure to scroll down to the recipe card below for the complete details!

  • Start by grinding gluten-free oats into a fine, flour-like texture using a food processor or blender—if you’re using oat flour, you can skip this step. In a mixing bowl, whisk together the oat flour, almond flour, vanilla protein powder, and a teaspoon of matcha powder.

  • Next, stir in the creamy almond butter, maple syrup (or honey), and vanilla extract. Mix until everything is well incorporated. If the dough feels too dry and isn’t holding together, add a bit more maple syrup, one tablespoon at a time, until you get a sticky consistency that easily forms into a ball.
  • Now, it’s time to shape the bites! Scoop out small portions and roll them into 1–1.5-inch balls, then place them on a parchment-lined baking sheet. Pop the tray into the freezer for about 20–30 minutes to help them firm up.

  • For an extra touch, mix a little matcha powder with vanilla protein powder and toss the chilled bites in the mixture to give them a light, green coating. You could also use coat the bites in a little crushed pistachio to give them a little green crunch! Similar method as my chocolate pistachio bites.

  • Store these protein bites in an airtight container in the fridge for up to a week, or freeze them for longer storage (about six weeks). They’re the perfect grab-and-go snack with a fun St. Patrick’s Day twist! 🍀

Description

These shamrock-inspired Matcha protein bites make for a healthy snack for pre-workout, an afternoon pick-me-up, or a nutritious sweet gluten-free St. Patrick’s Day treat! 


Ingredients

Units Scale
  • 1 cup (80g) gluten-free rolled oats or ¾ cup gluten-free oat flour (see notes)
  • 1 cup (96g) blanched fine almond flour
  • ½ cup (60g) vanilla protein powder
  • 2–3 teaspoon culinary grade matcha powder (divided)
  • ⅔ cup creamy no-stir almond butter (other creamy nut or seed butter may be substituted)
  • ½–⅔ cup maple syrup or honey
  • ½ tsp pure vanilla extract
  • Optional – ¼ teaspoon mint extract for that shamrock shake flavor
  • Optional – ¼ cup dark chocolate chips

Instructions

  1. In a food processor or blender, grind oats into a flour-like texture. If using oat flour, skip this step. Transfer to a large mixing bowl.
  2. Add almond flour, protein powder, and 1 teaspoon matcha. Whisk to combine.
  3. Stir in almond butter, ½ cup maple syrup, and vanilla and mint extract. Mix well. If the mixture is too dry, add 2–4 tablespoon more maple syrup until it holds together. Fold in dark chocolate chips, if using.
  4. Line a baking sheet with parchment paper. Scoop and roll the dough into 1–1.5-inch balls. Place on the sheet and freeze for 20–30 minutes.
  5. In a small bowl, mix a little matcha and vanilla protein powder. Transfer bites to a ziplock bag, add the matcha mixture, and shake to coat—or roll them by hand. See notes for other coating options.
  6. Store in an airtight container in the fridge for 1 week or the freezer for up to 6 weeks.

Notes

 Plant based protein powder (pea, hemp, rice, pumpkin seed, etc) works best for this recipe, but if you don’t have any on hand you can play around with other ingredients that are similar in weight/protein.

If preferred, crushed pistachio may be substituted for the coating to keep them green and give them a little crunch! Similar method as my chocolate pistachio bites.

    I was thinking of making some sort protein bar for St. Patrick’s day. All I could think about was adding spinach or some vegetable though! I am so glad I came across this – matcha is a much better alternative.

    These look amazing!!! I can’t wait to try them! I wish mine would have turned out that green. The most recent organic matcha I got wasn’t very bright and I was bummed I had used the last of what I had previously in the balls vs coating them. Plus it bummed me out for my other recipes but hey they still get the health benefits of mactha!

    Lindsay -LURVE the natural color on these little bites! You know what – I haven’t yet tried matcha green tea to cook/bake with, it might be my favorite green food once I do. Currently though I adore spinach! Whether it be savory or sweet, spinach is my go to for natural green coloring!

    This is perfect. I actually thought about emailing you yesterday to ask if you had a preferred brand of matcha. I found one on Amazon that is best seller for culinary uses. So…I wasn’t sure. I think my favorite green food may be asparagus, or peas, or kale, or …. I like most green foods!

    These look amazing! I used to drink matcha latte’s and protein shakes when I worked at Starbucks and they were my favorite! Never would have though to put them in a healthy bite! Such an interesting recipe. Oh, and favorite green food is probably swiss chard or spinach!

    I love the use of the banana chips in these so creative. And they are so green. I haven’t tried matcha yet but this would be a great way to! love it!

    yes, matcha is everywhere….and I am not sure how I feel about it yet as I messed it up the first time and it put me off! I need to give it another try! Love that you are just such a genius with these healthy bites. Love them!

    My favorite green food is probably spinach, I know that sounds lame though… pistachios are awesome too! Love the healthy shamrock shake in bite form- yum!

    My favorite green food would be brussel sprouts. I also like parsley alot!!I’ve never tried Matcha before but these bites look so lucky and delicious I just might have to run right out and get some!!!!!!!!!!!!!!
